I was most honoured to be invited to the 'A Taste & Feel of Hong Kong' event organized by the HKTDC ~ Hong Kong Trade Development Council featuring a cooking demonstration by celebrity Hong Kong TV personality, Luk Ho Ming with Canton-i Chef Yim Yu King.

As a prelude to In Style ● Hong Kong event happening in November this year, famous Hong Kong food personality Luk Ho Ming (陸浩明) was here in Canton-i Sunway Pyramid to share his insights and culinary experiences on authentic Hong Kong cuisine welcoming In Style • Hong Kong, Kuala Lumpur where more on Hong Kong food, culture and products will be showcased.

Luk Ho Ming  (陸浩明) or better known by his TV alias ‘Six Six Six’, is a famous artist with Hong Kong TVB hosting a various Food and Variety shows in TVB Jade, J2 and TVB Network Vision. His most recent his collaboration with 'Fat Mum' or 'Fei Ma' (肥媽), where he co-hosted with Maria Cordero in the popular cooking show called 'Good Cheap Eats' (暖DD.食平D). On the show, he explores Hong Kong’s popular markets and food stores in a mission to discover good and cheap ingredients.

What is In Style ● Hong Kong?

In Style ● Hong Kong is a promotion campaign organized by the HKTDCHong Kong Trade Development Council to promote and highlight Hong Kong’s vibrant and unique lifestyle in Malaysia. After a successful launch in Jakarta, Indonesia (2015) and Bangkok, Thailand (2016), the HKTDC is hosting its third edition of In Style ● Hong Kong in Kuala Lumpur, Malaysia on 7th and 8th of November 2017.

We were indeed privileged given the opportunity to witness a cooking demonstration by Chef Yim Yu King together with Luk Ho Ming featuring the finest Hong Kong cuisine tempting your palate. Luk Ho Ming worked hand-in-hand with Chef Yim assisting him to prepare 3 specially curated dishes which will be made available to Canton-i diners from 1 October until 30 November 2017.

One should never miss drinking the tummy-warming double-boiled soup. Do you know that these soups are not only delicious, they are perfect complements to any meal and are packed with nutrition and health benefits? Having that in mind, chef offering a high in nutrition, Double Boiled Pork Lean Meat Soup with Sea Whelk and Honey Fig to delight your senses.

Made with natural ingredients that include Fig (无花果), Sea Whelk (响螺), Scallop (瑶柱), Lean Pork (瘦肉), Longan (龙眼) with salt and rock sugar (冰糖), this soup is a great way to replenish and rejuvenate our body.

Chef explained that fig is a calcium-rich food and a good source of fiber, high in antioxidant and also an excellent source of essential fatty acids, while sea whelk and high protein pork lean meat, provides lots of benefit to the body. It goes through the double-boiling process to release the taste of all ingredients and lock in the nutrients in the soup.

Slow-Cooked Dragon Garoupa Fillet is an exquisite Cantonese delicacy offering by Canton-i inspired by the Guangdong region of China. The Dragon Garoupa is sourced from Sabah for its silky smooth and soft texture which is best-to-serve with any cooking method, because of its non-fishy scent.

The main dish of Slow-Cooked Dragon Garoupa Fillet was prepared using only simple ingredients such as Fish Slices (鱼片), Celery (芹菜), Wolfberry (子), and Choy Sum (菜心) with salt and sugar to taste. Wolfberries are a must in most soup to improve its flavor and are added as a natural “sweetener” to bring out the refreshing, sweet taste while providing good nutrients to the body. The taste of the dish is enhanced by the crunchy texture of celery suits perfectly with the soft and smooth texture of the fish.

Chef prepared the fish broth using pre-fried fish bone from the Dragon Garoupa and boiled till the broth turns milky for the essence and flavours to seep into the broth. Fish fillets are added into the boiling white broth to quickly cook the fish fillets. The trick to cooking the fish fillet is not to overcook it, be quick and fast.

Chef delicately arranges each slice of the white flaky Garoupa fish fillet on the plate and plated it with wolf berries and choy sum to enhance the flavours and presentation.

Best eaten hot and a perfect dish for those who are into healthy eating, but don't want to sacrifice great tasting food. Preparation is simple, yet elegant - impressive dish. Diners especially fish lovers will experience and enjoy the wonderfully moist, flaky texture, and great flavour of the fresh fish!

To complete the tasting experience on a sweet soothing note, a dessert of Double Boiled Coconut with Natural Peach Resin Soup and Almond was served. A collagen-rich healthy dessert made from scratch using almond milk and coconut water as the base soup with nutritious peach resin or peach gum and egg white for the smooth and silky taste.

Much thought goes into the creation of this healthy dessert such as using the nutritious coconut for its values that are high in fiber, vitamins, minerals and amino acids which hydrate the body. Peach resin, on the other hand, it's a nourishing food rich in collagen.

It is the natural resin secreted from the peach tree, formed in amber like crystals on the tree. It's touted to contain almost the same nutrient content as bird’s nest. Hence, I would name it the poor man's bird nest!

Preparation is simple and easy to follow with four ingredients going into the making of this delectable dessert. Young coconut water is mixed with soaked almond and blended till smooth. Next, boil the filtered almond concoction while stirring in the egg whites under low heat.

Once the eggs whites have set into stripes of silky smooth textures, remove from heat and add on the pre-soaked peach resin. Pour the warm dessert into the coconut and serve it warm.

Both the silky smooth egg white and the warm almond milk is a great pairing to the nourishing peach resin. Personally, this is one of the most satisfying desserts I have ever tasted for the longest time. I'm pretty sure this guilt-free dessert will go well with many as they are delicious and figure-friendly too!
