Three Treasure Yee Sang
七彩三宝魚生 (鲍鱼, 熏蛙鱼和海蜇鱼生)(三星拱照)

The experience starts with a staple dish in any new year celebration, a prosperity Yee Sang toss. Instead of just having the standard yee sang with salmon, Din Tai Fung has taken the feast a step further by featuring not one but three specials ~ abalone, smoked salmon and jellyfish in their yee sang - to be tossed together with about 20 other ingredients.

Succulent Abalone

Yee Sang dish right before the ritual tossing starts

The ritual of tossing the yee  sang starts with the layering of shredded vegetables, raw fish, sauces and condiments along with uttering auspicious wishes for a prosperous new year for everyone at the dinner table.

Then comes the best part - the actual tossing and the higher you toss, the higher your growth in "fortunes".

Here in Din Tai Fung, they do it in style as the staff on duty shall be assisting diners with the preparations of the yee sang, helping to add in the sauces and condiments and uttering good and favourable wishes as he/she goes along at the dinner table.
